Boil one large pot of water. While that's boiling roast a head of garlic. ( I use a little bit of olive oil and wrap in aluminum foil) Cut 3 pounds of Yukon gold potatoes into cubes.
Once water is boiling drop them in for about 15 minutes.
When those are done, drain them and mash with 1 cup of buttermilk, the cloves from the roasted garlic, sea salt and pepper to taste.
That's all! Super easy and frankly, who doesn't like mashed potatoes?
